Supporting a healthy and happy gut, Kombucha is a great fermented drink full of probiotics that will help boost & balance the mega microbiome in your gut.  It starts out as a sugary tea, which is then fermented with the help of a scoby. “SCOBY” (symbiotic culture of bacteria and yeast).  It’s a very close cousins to the mother used to make vinegar.

The scoby bacteria and yeast eat most of the sugar in the tea, transforming the tea into a refreshingly fizzy, slightly sour fermented (but mostly non-alcoholic) beverage that is relatively low in calories and sugar.


You will need:
  • Quart-Size Glass Jar
  • Plastic or Wooden Stirring Utensil
  • Tight-Weave Cloth or Paper Coffee Filter
  • Something to secure the cover to the jar (rubber band or canning jar rings work well
Ingredients (One-Quart Batch):
  • 2-3 cups: Distilled Water (Ideally, Unfluoridated, Unchlorinated)
  • 1/4 cup: Sweetener of choice: Honey, Sugar, Maple Syrup, Brown Rice Syrup)
  • 2 Bags Tea Bags or 1 .2 Tsp Loose Tea
  • 1/2 cup: Starter Tea or Distilled White Vinegar
  • Active Kombucha SCOBY


  • Make Sweet Tea:
    • Heat water, stir in sweetener to dissolve
    • Add tea bags, and brew for 10 min (a metal tea ball is okay for loose tea, remove before adding SCOBY)
    • Remove tea bags, or keep in while cooling, if you prefer stronger (remove before adding SCOBY)
    • Let cool to 68-85°F (around 30 min)
  • Add starter tea or distilled vinegar
  • Add active Kombucha SCOBY
  • Cover jar with a tight-weave towel or coffee filter, and secure with rubber band
  • Let mixture sit undisturbed at 68-85°F, out of direct sunlight for 7-30 days, or to taste
    • You can begin tasting after 7 days by removing a small batch with a metal straw or spoon
    • The longer the mixture sits, the less unsweet, and more vinegary it will taste
  • Pour Kombucha off the top of the jar for consuming.  Retain the SCOBY and enough liquid from the bottom of the jar to use as starter tea for the next batch.
  • The finished Kombucha can be flavoured and bottled, if desired, or enjoyed plain.
    • Suggested flavouring include:
      • Blueberries and cinnamon
      • Berries and fresh or candied ginger
      • Strawberries and basil
      • Cherries and almond extract
      • Pears and almond extract
      • Apple juice and cinnamon
      • Lemon or lime juice and fresh ginger
      • Pineapple juice, coconut water, and coconut extract
      • Vanilla beans (split open) or vanilla extract
      • Pumpkin pie spice
      • Fresh or candied ginger
      • Coconut extract
      • Lavender and chamomile
      • Chai Spice Blend
      • Lemon balm and rose hips
 Once your Kombucha SCOBY is active you can make Kombucha on a regular basis using the ratios below. Keep in mind that these ratios are for making regular batches of Kombucha.


One-Quart Batch:

  • 1½ teaspoon loose tea OR 2 tea bags
  • ¼ cup sugar
  • 2-3 cups water
  • ½ cup starter tea or vinegar

Half-Gallon Batch:

  • 1 tablespoon loose tea OR 4 tea bags
  • ½ cup sugar
  • 6-7 cups water
  • 1 cup starter tea or vinegar

Gallon Batch:

  • 2 tablespoons loose tea OR 8 tea bags
  • 1 cup sugar
  • 13-14 cups water
  • 2 cups starter tea or vinegar
